Say what--Fried salad?

This is a potato salad for people not watching their calories, but it is yummy!

Ingredients

6 Eggs
Oil for frying
1 pound Bacon
4 pounds Potatoes
1 1/2 cups Miracle Whip or mayo
1/2 cup diced pickles or relish
1/2 cup Celery
Salt
Pepper

Instructions

Cook eggs by boiling. Chop these up into small pieces. Chop celery up into small pieces. Cook bacon until crisp, crumble into small pieces. Peel and cut about 4 pounds of potatoes into cubes. Fry the potatoes in the oil at about 400 degrees until tender and golden (about 5-6 minutes). Place potatoes and other ingredients in large bowl and toss. Add salt and pepper to taste.
