This recipe is from cold winter days when lettuce was unavailable.
1 quart sauerkraut, drained and cut coarsely with scissors
1 cup apple cored and diced
1 cup onion diced fine
2 cups celery sliced
1 cup green pepper diced
1 cup sweet red pepper diced
3/4 cup vinegar
3/4 cup sugar

Place sauerkraut in bowl.
The other vegetable ingredients may be chopped in the food processor, using metal blade. Do not pulverize. Add chopped ingredients to bowl. Dissolve sugar in vinegar and pour over. Let stand at least 4 hours in refrigerator before serving. Keeps several days in refrigerator.
