Sambal Salad

Great side for Indonesian Shish Kabobs. Unusual combination that sounds weird but tastes great. (And I HATE pickled beets)

Ingredients

¾ Cup real mayonnaise (DO NOT USE MIRACLE WHIP!) 2 Tablespoons prepared yellow mustard 2 Tablespoons orange juice 1 Cucumber 3 Navel oranges 2 Large Apples 1 Jar pickled beets (drained) 1 small jar dry roasted peanuts

Dressing: Whisk together mayo, mustard, and orange juice and keep in refrigerator until ready to use. Score all around the length of the cucumber skin with a fork then thinly slice. Peel the oranges (be sure to get all of the pith off) then slice across the sections about ⅛th of an inch thick. Core the apples and slice into bite sized pieces. In large bowl combine beets, cucumber, oranges, and apples pouring dressing over all. Stir gently until coated. Pour half the jar of peanuts into the salad, reserving the rest for the table. Goes great with Indonesian Shish Kabobs.
