Roasted Potatoes

This recipe guarantees that your potatoes are cooked through with a nice golden crust. By steaming the potatoes, prior to roasting, you will have the perfect soft center and crunch on the outside.




2 lbs of small yellow potatoes (can use red and purple or a mix of potatoes too)
1 Tbsp of dijon mustard
¼ cup of extra virgin olive oil
2 Tbsp of honey
2 Tbsp of fresh Rosemary or Thyme
Kosher salt and ground pepper

Preheat oven to 450 degrees. Place your potatoes in a steamer basket and steam for 15 minutes. Cool down until you can cut them into halves or quarters. In a large mixing bowl, combine all remaining ingredients, except salt and pepper. Add the potatoes and cover with dressing. Add potatoes to a large baking sheet and make sure they have space in between. Sprinkle with kosher salt and pepper. Place in the oven to roast for about 15 minutes. Toss the potatoes so that they brown on both sides. Bake for 5-10 more minutes or until nicely browned. Sprinkle with salt.
