Roasted and Mashed Sweet Potatoes

Roasting the sweet potatoes before mashing brings out their natural sweetness.

3 lbs of Sweet potatoes - peeled and chopped into large pieces
1 red onion - chopped into large pieces
4 cloves of garlic
Salt and Pepper
½ cup of toasted pine nuts
2 tablespoons of maple syrup
¼ olive oil
Milk and butter

Pre-heat oven to 375. In a large bowl, toss the cut sweet potatoes, onions and whole garlic cloves in the olive oil, salt and pepper. Line a baking sheet with foil, and spread the mixture out evenly on the pan once well-coated. Wrap with another piece of foil to cover. Bake for 20-25 minutes or until potatoes are soft. Remove from heat and place back into the bowl. Add milk and butter and mash until desired texture of mashed potatoes is achieved. Add toasted pine nuts and maple syrup. Check for salt and pepper and serve.
