This is a tangy complement to any meat dish, especially pork or poultry. The amount of sugar can be adjusted to suit your own taste -- but we love the tangy flavor!
4 cups fresh or frozen chopped rhubarb
3/4 c. sugar
1 c. applesauce

In medium size saucepan, cook rhubarb, covered with water, for about 20 min, or 'til tender.
Remove from heat and drain, saving juice for use in beverages. Use Cuisinart stick blender or food processor to puree the rhubarb 'til smooth.
Add sugar and applesauce and serve warm or chilled. Enjoy!
