Quinoa Fruit Salad

2cooker cups quinoa 2¼cups water 1mango, peeled, pitted and cubed 1apple, peeled, cored and diced 1pear, peeled, cored and diced 1orange, peeled and sliced, bitter white pith removed ¾cup toasted and chopped pecans 1½tablespoons fresh mint, chopped 1tablespoon pure maple syrup 2teaspoons ground cinnamon

Put the quinoa and water in the cooking pot of the Cuisinart® Rice Plus™ Multi-Cooker. Select the Brown Rice function and press Start. Once the audible tone has sounded to indicate the end of cooking, turn the unit off and open the lid. Transfer the quinoa to a baking sheet to cool. Once the quinoa is cool, transfer to a medium-large mixing bowl. Add the remaining ingredients; toss to combine. Adjust seasonings and serve.
