Potatoes & Onions Chantilly

This recipe always gets rave reviews at my dinner parties. It can be made ahead (a hostess delight!) and baked when you are ready. Although the recipe is easy, it looks and tastes like a gourmet dish!




4 cups mashed potatoes (Instant mashed potatoes work fine!) ¼ cup butter 1 ½ teaspoon. salt ¼ teaspoon. pepper 3 ½ oz. can of French Fried Onion Rings 1 cup heavy cream, whipped until stiff ⅔ cup shredded cheddar cheese ½ teaspoon. salt 1 ½ teaspoon parsley flakes

Combine mashed potatoes, butter salt and pepper and mix well (if using instant mashed potatoes follow the directions on the package). Fold in all but ⅓ cup of the French fried onions. Spoon mixture into a greased 9x12 baking dish. Combine the whipped cream, cheese and ½ teaspoon. salt, blending well. Spread whipped cream & cheese mixture over the potatoes. Sprinkle with parsley flakes. Either refrigerate at this point to put in the oven later or bake immediately at 325 degrees for 23 minutes, or until delicately browned. Remove from oven and top casserole with reserved French fried onion rings.
