Pear/Apple Salad

Ingredients

1 Large Head of Romaine Lettuce 4 oz. Shredded Swiss Cheese 1 Cup Cashews 1/4 Cup Sweetened Dried Cranberries (I use Craisins) 1 apple cubed 1/2 t. salt 1 pear cubed 2/3 C. oil Dressing: 1 T. Poppy Seed 1/2 C. Sugar 1/3 C. Lemon Juice 2 t. chopped onion 1 t. dijon mustard

Instructions

In blender, combine sugar, lemon juice, onion, mustard, and salt. Cover, process until blended; with machine running add oil in slow and steady stream, processing till thick and smooth. Add poppy seeds. Process a few seconds longer. In large serving bowl, combine all salad ingredients, toss to mix. Pour dressing over salad just before serving. Toss to coat.
