2 ounces Reggiano Parmesan cheese, cut in ½-inch pieces
3 pounds Yukon Gold potatoes, peeled, cut in chunks
8 cloves garlic, peeled
1 teaspoon kosher salt
1 cup buttermilk (let stand at room temperature for 30 minutes)
½ teaspoon freshly ground black pepper

Instructions
Insert the metal blade in the Cuisinart® Food Processor. With the machine running, drop the Parmesan cubes through the small feed tube and process until finely ground, about 20 seconds. Reserve.
Place the potatoes and garlic in a 3-¾ quart Cuisinart® saucepan. Add water to cover and salt. Bring to a boil, reduce heat to medium and cook, loosely covered, until tender, 15-20 minutes. Drain and return the potatoes and garlic to the pot. Place the pot over low heat for about 1 minute to remove excess moisture.
Using a Cuisinart® SmartPower Hand Mixer fitted with the stainless steel beaters, mash the potatoes using Speed 1 or 2 until smooth, about 45 seconds. Add the buttermilk, Parmesan and pepper. Mix on medium speed until whipped and fluffy, about 1 - 1½ minutes. Serve hot.
