Two 2 pound 8 ounce cans yams, drained ⅔ cup orange juice 1 tablespoon grated orange rind 5 tablespoons brandy 2 teaspoons salt Freshly ground pepper to taste I teaspoon ground ginger 4 tablespoons (½ stick) butter, melted ⅓ cup light or golden brown sugar, packed 3 egg yolks Praline Topping ⅔ cup light or golden brown sugar, packed ¼ pound (1 stick) butter, melted 1 cup chopped pecans (about 4 ounces) I teaspoon ground cinnamon
In mixing bowl with electric mixer, beat yams until smooth. Mix in remaining yam casserole ingredients, beating until mixture is light and fluffy. Butter a shallow 2 quart casserole (7 by 11 inches). Pour in yam mixture, smoothing top evenly. Make praline topping by mixing all ingredients together in small bowl. Spread evenly over yams. *May be refrigerated covered overnight. Bake at 350 degrees for 45 to 50 minutes, or until golden brown and bubbly. Remove from oven and let stand 10 minutes before serving.
