1 16 oz pork sausage roll 2 loaves unsliced stuffing bread 1 large onion diced 1 stick of butter turkey gizzards 4 cups of water 4 large eggs beaten ¼ teaspoon kosher salt ⅛ teaspoon fresh cracked pepper greased 15x10 shallow baking dish ⅛ teaspoon thyme
bring water and gizzards to a boil then simmer for 20 min. put in fridge to cool. crumble sausage in large skillet and brown on med high. when sausage is done drain on paper towels and let cool. wipe out skillet and add ¼ stick of butter. when butter melts add diced onion and cook on med high until soft and a little brown. let cool. place sausage and onions in a large mixing bowl. cut off crust of each loaf of bread and cut into 2" slices. dip each slice into turkey gizzard water and squeeze out excess liquid. add to sausage and onions. add eggs kosher salt pepper and thyme. mix thouroughly with your hands. place in baking dish and dot the top with remaining ¾ stick of butter. bake on 375 for 30-40 minutes or until slightly brown on top.
