Mushroom Casserole

Wonderful side dish, especially for a special occasion.


2 pounds fresh mushrooms 3/4 cup chopped onions 4-6 tablespoons butter 2 cans Golden Mushroom Soup 1/4 cup cooking sherry 1 pkg. shredded Swiss Cheese 2 cups buttered bread crumbs

Wash mushrooms; remove caps; slice stems and add to chopped onion and saute. Add caps and saute. Do Not Drain. Put 1 cup soft buttered bread crumbs in a large greased glass casserole dish. Dilute 1 can of the soup with 2 Tablespoons cooking sherry and spread over the crumbs. Layer the mushroom mixture over the crumbs. Dilute the other can of soup and spread over the mushrooms. Sprinkle with 1 pkg of shredded Swiss cheese. Cover with 1 cup buttered bread crumbs. Bake at 350º for 20-30 minutes until bubbly. You can make this early in the day and keep in the frig until you are ready to cook it.
