Momma's Marvelous Au Gratin Potatoes

A twist on the traditional Au Gratin recipe, this includes Kale to add a very nutritious extra flavor.




¼lbs Bacon, sliced thin
Small bunch of Kale, chopped
4 lg potatoes, sliced thin
8-12oz Shredded Cheddar and Provolone
16oz Heavy Cream

Saute bacon until desired crispiness, put on paper towel to cool and drain grease. Use a small amount of the bacon grease to saute the kale until it becomes slightly limp. Set aside to cool. In a large glass baking dish, layer sliced potatoes, cheese, kale, and repeat until dish is almost full. Top with bacon. Pour heavy cream over all until it is almost to the top of the layers. Cover dish with lid or foil. Bake at 375 until bubbly; about 30 minutes. Uncover and bake until browned on top. Serve with a smile!
