We love this recipe with home cooked pinto beans and salad with Catalina dressing all piled on top for a real Mexican Fiesta!
Ingredients
Long Grain Rice (I use 2 cups)
Chicken Broth instead of water
14 oz can tomatoes
1 small onion, chopped
4 slices bacon
2 cloves garlic, chopped
2 Tbsp green chilies
salt & pepper

Instructions
Cook bacon, drain, crumble and set aside. In bacon grease, sauté rice onion and garlic. Add broth, green chilies, tomatoes salt & pepper. Let simmer the usual time about 20 min. covered. Fluff with fork and enjoy.
