Mediterranean Pasta Salad

Quick and easy salad that goes well with any dish.




1 lb. Pasta, any shape – Cooked according to package directions 2 Small jars Marinated Artichoke Hearts ⅓ Cup Mayonnaise ½ Cup finely diced Green Pepper 1 Medium Onion finely diced ⅓ chopped Sun Dried Tomatoes 1 Cup coarsely chopped Spinach (I just use frozen spinach, defrosted and well-drained) Salt and Pepper to taste

Drain oil from artichoke hearts, reserving liquid from one jar for salad. Coarsely chop artichokes into ½ inch pieces. Mix chopped artichokes and reserved liquid with other ingredients, tossing to coat pasta well. Chill for at least two hours before serving.
