Marshmallow Topped Sweet Potatoes

This sweet potato casserole is full of fruit, nuts & other goodies.


8 sweet potatoes 3 tbsp melted butter 1 sm can crushed pineapple in juice (drained) 1/4 c coconut 2 tbsp chopped maraschino cherries 1/4 c fresh orange juice 2 tbsp cinnamon candies 1/2 pkg mini marshmallows

Butter a casserole dish. Set aside. Microwave or boil sweet potatoes until tender. Peel & mash. Add remaining ingredients, except marshmallows. Bake at 350 until heated through. Just before serving, top with marshmallows. Sprinkle a few cinnamon candies on top of marshmallows & drizzle with cherry juice for added color. Put back in oven & bake til marshmallows are browned & puff up. Bon Appetit!!
