Mama's Roasted Potatoes

My mom is all about simple down home cooking. She gets it on the table in 30 minutes or less and it's always delicious:)


1 1/2 lbs. Red Potatoes, quartered 2-3 TBS, Olive Oil 3-4 cloves garlic, minced 1 tsp. lemon zest 1 Tbs. Fresh Rosemary, chopped 1 Red onion, cut into large chunks Salt and Pepper to Taste Grated Parmesan

Place quartered potatoes in a roasting pan. Add red onion chunks, garlic, lemon zest, rosemary, salt and pepper. Drizzle with olive oil. Toss with clean hands until is well coated. Bake at 425 degrees 30-45 minutes until brown and crispy. Sprinkle with Parmesan and serve.
