Mama Betty's Potato Salad With Shrimp

Russett potato salad with shrimp goes well with barbecue dishes or sunday dinner with your favorite greens and cornbread.




5 pounds of potatoes 12 boiled eggs 3 celery stalks 1 medium sweet onion 1 green onion 3 tablespoons pepper 1 teasespoon of salt 2cups sweet pickle relish half a cup sugar 2tablespoons mustard 4oz diced pimentos 2lbs. lg. gulf shrimp and about 2 cups mayanaise (more if you like)

Boil potatoes (fork tender), eggs, and shrimp separtely. Don't over cook shrimp. Peel and devein shrimp. Dice potatoes,eggs shrimp,onions,celery in a large bowl. Add black pepper, salt, mustard, mayonaise. Drain pickles and pimentos in collander to get rid of excess liquid and add to mixture. Mix all ingredents together. Sprinkle top of salad with paprika. Chill and serve.
