Loaded Scalloped Potatoes

They bake up tender and real creamy. taste just like eating a loaded baked potatoe but a lot easier.




8 large red potatoes
1 large yellow onion
10 slices of bacon
1 stick of butter
¼ cup of rice flour
2 cups of whole milk
1 package of grated velevetta cheese
1 small container of sour cream
Salt, pepper and garlic salt

I use a mandalin to slice my washed red potatoes real thin. Place them in a pan with enough water to cover, add salt to taste, and boil until tender and drain. Chop the onion and saute in the melted stick of butter until they are tender. Add the milk and heat and add your rice flur and stir with a wisk to make sure there are no lumps . Add the grated cheese and stir well until melted and blended and add the sour cream and blend well. Crumble the cooked bacon and add to milk mixture. Take a 9 x 13 casserole dish and spray with cooking spray, add a layer of sliced drained potatoes pour half of the milk mixture over them, and repeat ending with milk mixture. Bake in a 350 degree oven for 30 mins.
