Hearty & Yummy ~ this stepped-up potato salad is always a big hit!

Ingredients
5 or 6 large potatoes, I like Yukons
olive oil
salt
½ lb bacon
½ lb maple smoked ham, cut into cubes
1 large onion, diced
3 hard boiled eggs. diced
2 Tbl sweet pickle relish
2 Tbl dill pickle relish
2 teaspoon salt (or to taste)
1 teaspoon fresh ground black pepper
1 teaspoon ground celery seed
1 teaspoon dill seed
1 tbl chopped fresh dill
1 tbl chopped fresh chives
1 tbl chopped fresh parsley
1 tbl chopped cilantro
1 cup mayo
½ cup half & half
2 teaspoon paprika

Instructions
1. Rub clean potatoes with olive oil, sprinkle with salt & wrap in foil. Bake until done, but firm - not mushy, approx 1 hr.
2. Cut bacon into small pieces & brown in skillet until crisp. Remove to drain on paper towels. Pour off all but 1 tbl of bacon drippings, then in same skillet add ham cubes & chopped onion, saute until onion is translucent. (If you dont want to use the drippings, pour off all & add 1 tbl butter) (I use a little of each) Pour into large bowl.
3. Remove foil & rough chop potatoes, leaving skin on, into cubes. Add potatoes into bowl with ham & onion. Continue to add eggs, pickles & herbs. Toss gently to mix. In mixing cup whisk together mayo, seasonings (except paprika) & half & half until smooth. Pour over potatoes & mix gently-try not to break up potatoes. Add more mayo/half & half if necessary to your liking.
4. Sprinkle top with paprika & bacon. Serve immediately warm or refrigerate until serving time. Serve with love & lots of friends!
