Ingredients

6cooker cups dried French lentils, soaked for 2 to 3 hours4cups vegetable stock1tablespoon herbes de Provencepinch sea salt¼teaspoon freshly ground black pepper¾cup niçoise olives, roughly chopped2tablespoons capers, drained and rinsed3tablespoons fresh lemon juice½tablespoon fresh thyme leaves

Preparation

Put the lentils, stock, herbes de Provence, salt and pepper in the cooking pot of the Cuisinart® Rice Plus™ Multi-Cooker. Select the Slow Cook function. Close the lid and set the timer for 4 hours. Press Start. Once the audible tone has sounded to indicate the end of cooking, open the lid and add the remaining ingredients. Stir and adjust seasonings to taste. Serve hot or at room temperature.
