Indian Basmati Rice

Makes about 6 cups

This rice is as fragrant as it is attractive. Typically served alongside meat or vegetable dishes, there is no reason why this cannot be enjoyed on its own.

Ingredients

  • 1½cups basmati rice
  • 1¼ cups water
  • 1½-inch piece fresh ginger, peeled and halved
  • 2garlic cloves, smashed
  • ¾teaspoon kosher salt
  • ¼teaspoon freshly ground black pepper
  • ¼teaspoon ground turmeric
  • Pinch cumin seeds
  • 2green cardamom pods, slightly smashed
  • 1½-inch strip lemon peel
  • ½cup peas
  • 2cilantro sprigs, finely chopped

Preparation

  1. Put all of the ingredients, except for the peas and cilantro, dlrectly into the steamer without the tray. Secure lid.
  2. Select Grains, set timer for 35 minutes and press Start.
  3. Once timer expires, stir in the peas and then cover again.
    Allow to sit for 5 minutes.
  4. Before serving, carefully remove the ginger and lemon peel.
    Stir in the chopped cilantro.
