Ingredients

  • ¼cup extra-virgin olive oil
  • 2tablespoons white balsamic
  • vinegar (or white wine vinegar)
  • 1tablespoon water
  • 1garlic clove
  • 1/2 small shallot, trimmed and cut into
  • 1-inch pieces
  • 1teaspoon dried thyme
  • ½teaspoon kosher salt
  • ¼teaspoon freshly ground black pepper
  • 2large portobello mushrooms,
  • about 6 to 8 ounces, thickly sliced
  • (about ¾ inch)

Preparation

  1. 1. Put the olive oil, vinegar, water, garlic, shallot,
  2. thyme, salt, and pepper in a food processor ftted
  3. with the metal chopping blade. Process until
  4. emulsifed. Pour over the mushrooms; toss gently
  5. to coat. Let stand 10 to 15 minutes.
  6. 2. Insert plates on grill side. Preheat the Griddler®
  7. Compact to Medium in the closed position.
  8. When the unit is hot, arrange one half of the
  9. mushrooms on the bottom grill, cut side down.
  10. Close; grill for 2 minutes. Remove; reserve on
  11. platter. Repeat with the remaining mushrooms.
  12. 3. Serve warm or chilled
