Greek Salad

Great summertime staple - excellent dish to take to parties.


4 tomatoes, sliced thin 1/2 purple onion, sliced thin 2 green peppers, sliced thin 1 cucumber, peeled/sliced 1/2 C black olives 6 oz feta cheese Dressing: 1/2 t salt 1/4 t pepper 1 T chopped parsley 1 t oregano 1 garlic clove, minced 2 T lemon juice 1/2 c olive oil Lettuce

Combine salt, pepper, parsley, oregano, garlic, oil & lemon juice and blend well. Pour over veggies and cheese and toss well. Marinate at least 1 hour. Pour marinated veggies over lettuce, toss and serve.
