Greek Salad

Usually made with orzo, white rice complements the Greek flavors in this delicious and bright salad.


Makes about 12 cups


4cooker cups long-grain white rice water (to 4-cup white rice marking in cooking pot) 2cups diced cucumber 2cups halved grape tomatoes ¼cup chopped fresh parsley 2tablespoons extra virgin olive oil ½cup chopped kalamata olives 1cup crumbled feta 3tablespoons fresh lemon juice ¼teaspoon sea salt ¼teaspoon freshly ground black pepper

Put the rice and water in the cooking pot of the Cuisinart® Rice Plus™ Multi-Cooker. Select the Hard Rice function and press Start. Once the audible tone has sounded to indicate the end of cooking, open the lid and add the remaining ingredients; toss to combine. Adjust seasonings to taste. This dish can be enjoyed warm, cold or at room temperature.
