Ingredients

4cooker cups long-grain white ricewater (to 4-cup white rice marking in cooking pot)2cups diced cucumber2cups halved grape tomatoes¼cup chopped fresh parsley2tablespoons extra virgin olive oil½cup chopped kalamata olives1cup crumbled feta3tablespoons fresh lemon juice ¼teaspoon sea salt¼teaspoon freshly ground black pepper

Preparation

Put the rice and water in the cooking pot of the Cuisinart® Rice Plus™ Multi-Cooker. Select the Hard Rice function and press Start. Once the audible tone has sounded to indicate the end of cooking, open the lid and add the remaining ingredients; toss to combine. Adjust seasonings to taste. This dish can be enjoyed warm, cold or at room temperature.
