Mashed potatoes with sour cream and green onions




5 lbs. Golden Potatoes 1 cup sour cream 1 cup milk 1 stick butter (softened) 2 green onions (sliced) Salt & Pepper to taste

Boil the potatoes until tender, about 20-30 minutes. Let it cool, peel and mash it. Put the mashed potatoes, sour cream, milk and butter in the mixer bowl and whip on medium setting for 2-3 minutes until well blended. Take out the bowl from the blender and add salt and pepper to taste, half of the green onions and mix it well. Spray the glass baking dish with Pam or butter, put the blended mashed potatoes in the baking dish and bake at 350 degree oven for 30 minutes. Take it out of the oven and sprinkle the remaining green onions and serve.
