Perfect potato salad for a family gathering or pot luck.

5 lbs Red Potatoes (not Russet)
1 pkg Bacon (Pork or Turkey)
1 large White or Red onion chopped
1½ cups cider vinegar
¾ c. sugar
salt & pepper to taste

Microwave or boil unpeeled potatoes until cooked but not overly soft.
Cut into 1" chunks & set aside. Cut bacon crosswise into ½" pieces and cook in skillet until crisp. Remove and place on paper towel.
Reserve about 4 Tablespoons of drippings in pan. Cook chopped onion until translucent. Add vinegar and sugar and bring to boil.
Taste and adjust vinegar and sugar.
It should be tangy. Pour over warm potatoes.
Add cooked bacon and mix. Season to taste with salt and pepper. Serve warm.
