Side salad which can double as dessert OR breakfast OR... Lots of fresh fruit and fresh whipped cream keep it a healthy snack with an energy boost.
16 small side servings
1 Pint Fresh whipping cream
2 TBS Sugar/or substitute
¼ teaspoon Vanilla
2 small cans Mandarin Oranges, drained
1 can Pineapple tidbits
2 apples, peeled, cored, chopped
2 bananas, sliced
2 pears, peeled, cored, chopped
4 kiwis, peeled and chopped
2 peaches, pitted and chopped
½ cup walnuts, chopped
½ cup coconut shreds
Don't know, but except for the little fat in the cream and sugar which sweetens it, this is all natural.
Reserve juice from can of pineapple. Toss chopped apples pineapple juice (to help prevent turning brown). Drain apples just before adding them to the salad.
Whip cream to near stiff peaks, add sugar slowly to incorporate. Add vanilla and beat till stiff.
In a LARGE bowl, toss all the fruit, nuts and coconut; blend well. Fold in whipped cream. Chill till served.
