French Style Bacon & Spinach Potato Salad

Our family's favorite summer potato salad. Great for picnics too!


2.5 lbs baking potatoes
2 Tbs olive oil
2 teaspoon sea salt
½ lb bacon
2 Tbs olive oil
1 Tbs Dijon mustard
3 Tbs white wine vinegar
1 teaspoon salt
½ teaspoon ground pepper
1 clove garlic, finely minced or grated
1 Tbs fresh thyme
2 cups fresh spinach, roughly chopped
3 green onions, chopped

Preheat the oven to 425 degrees. Wash potatoes and then cut into one-inch pieces and toss with 2 Tbs olive oil. Spread evenly on a baking sheet, sprinkle with salt and then bake for 30-40 minuets, or until nicely browned. Let cool slightly before mixing the rest of the ingredients. Meanwhile, cook the bacon in a large sauté pan until just crispy, remove and let drain on paper towels and then crumble. In a large bowl whisk together 2 Tbs olive oil, Dijon mustard, white wine vinegar, salt, pepper, garlic, and fresh thyme until it comes together as a dressing. Add in the spinach, crumbled bacon, green onions, and potatoes and toss gently to combine. Serve at room temperature.
