Fiesta Potato Salad


5 lbs of Potatoes 1 red bell pepper 1 green bell pepper 1 onion 1 cucumber 1-2 large cloves garlic 3-4 large pickles Fresh spinach (optional) Fresh cilantro (optional) 1- 1/2 cups mayo 1/4 cup mustard 1 package hidden valley ranch dressing mix shredded cheese bacon bits jalapenos (optional)

Peel and cut up 5lbs potatoes, I prefer Yukon Gold, boil until tender or done. Chop up 1 red and green bell pepper, 1 onion, l cucumber,1-2 large cloves of fresh garlic. Chop up 3-4 large pickles I prefer Klaussen pickles. Chop up fresh Spinach and Cilantro--(this is optional so you can add as little or as much as you like). In large bowl dump potatoes and cut up veggies. Add 1 to 1 1/2 cups mayo, 1/4 cup mustard, 1 pkg. Hidden Valley Ranch Dressing Mix, mix all of this together well. Smooth the top of the salad down and add shredded cheese (I prefer cheddar) sprinkle bacon bits all over the top and add sliced jar japaleno's, which are also optional. Enjoy it's a crowd pleaser!
