Edamame and Green Pea Salad

Nice variation of the bean salad.




2 cups frozen shelled edamame defrosted

2 cups torn frozen peas (defrosted)

1 cup sliced button mushrooms (wiped clean)

½ cup diced red onion

3 Tbs. olive oil

3 Tablespoon Raspberry vinegar

2 cloves garlic, minced

2 tablespoons minced fresh basil

Salt and Pepper

⅓ cup crisp crumbled bacon

In chilled bowl toss edamame, peas, mushrooms and onion.

In a small bowl mix olive oil, Vinegar, garlic, basil, salt and pepper.

Pour over salad and toss to coat salad. Sprinkle with crumbled bacon.
