Easy Black Bean and Corn Salad

A quick, healthy, refreshing salad that is great for parties or a picnic.

Ingredients

2 cans black beans, drained and rinsed 2 cans white shoepeg corn, drained 2 cups diced cherry tomatoes 3 avocados, diced 2 jalepenos, minced 1 small bunch green onions, chopped 1/2 cup cilantro, chopped 2 cloves garlic, minced 3 tablespoons olive oil 1/3 cup fresh lime juice 1 teaspoon cumin salt and pepper to taste

Instructions

Mix all ingredients together in a large bowl. Chill for two hours before serving so the flavors blend well. Serve over fresh greens for a delicious summer salad. Goes great with tortilla chips too.
