This is one of my favorite ways to prepare cabbage.
Ingredients
1 tablespoon olive oil
½ cup minced shallots
2 garlic cloves, minced
2 tablespoon whole-grain mustard
2 teaspoon curry powder
12 cups thinly sliced cabbage (about 2 lbs)
¼ cup water
¼ cup rice vinegar
1 teaspoon turmeric (optional)

Instructions
Heat oil in a large nonstick skillet over medium-high heat. Add shallots and garlic; sauté 2 min. Add mustard, curry, and turmeric; cook 1 min, stirring constantly. Stir in cabbage and remaining ingredients; cook 5 min or until tender, stirring frequently
