Ingredients
- 3 cups old-fashioned rolled oats (not quick-cooking)
- 1½ cups raw cashews
- 1 cup unsweetened shredded coconut
- ½ cup sunflower seeds
- ½ cup hulled pumpkin seeds (pepitas)
- ½ cup pure maple syrup
- 1⁄3 cup olive oil
- 2 tablespoons packed dark brown sugar
- 1 teaspoon kosher salt
- ½ teaspoon ground cinnamon
- ½ teaspoon ground cardamom (optional)
- 1⁄8 teaspoon ground nutmeg
- 1 cup dried cranberries
Preparation
- Line the Baking Pan with foil; reserve.
- In a large mixing bowl combine all ingredients except for the dried fruit. Spread evenly on the prepared Baking Pan. Place pan in oven in the upper rack position. Set to Bake at 300°F. Bake for 25 to 30 minutes, or until nicely toasted, stirring halfway through.
- Add the dried fruit and stir to combine. Allow to cool completely on Baking Pan. Transfer to an airtight container to store for up to 3 weeks.
