Crunchy Candy Mashed Sweet Potatoes

This recipe is one of a kind. It is the ultimate side dish for any meal. Creamy mashed sweet pototoes with just the right amount of sweetness. Topped off with a crunchy crust that completes this dish.




2 lb. Sweet Potatoes ¼ cup half and half ¼ cup apple juice ½ cup brown sugar (¼ cup for crust & ¼ cup for mixing) ½ honey bunches of oats 1 large can apple pie filling ¼ cup chopped pecans 1 teaspoon nutmeg 2 teaspoon cinnamon ½ stick butter (¼ stick for mixing & ¼ stick melted for topping) 1 cup marshmellows (½ for mixing & ½ for crust) 3 tbl flour

Preheat oven to 350. Beat half and half, apple juice, sweet potatoes, ¼ stick of butter ¼ cup brown sugar, nutmeg, ½ marshmellows and cinnamon with electric mixer on medium speed until well blended. Spoon into 2-qt. shallow baking dish; top with apple pie filling and pecans. Mix ¼ cup brown sugar, honey bunches of oats and ½ cup marshmellows in large bowl. Sprinkle over fruit mixture. Then drizzel ¼ stick of melted butter over the top. Bake 35 to 40 min. or until heated through.
