Crunchy Candy Mashed Sweet Potatoes

This recipe is one of a kind. It is the ultimate side dish for any meal. Creamy mashed sweet pototoes with just the right amount of sweetness. Topped off with a crunchy crust that completes this dish.


2 lb. Sweet Potatoes 1/4 cup half and half 1/4 cup apple juice 1/2 cup brown sugar (1/4 cup for crust & 1/4 cup for mixing) 1/2 honey bunches of oats 1 large can apple pie filling 1/4 cup chopped pecans 1 tsp nutmeg 2 tsp cinnamon 1/2 stick butter (1/4 stick for mixing & 1/4 stick melted for topping) 1 cup marshmellows (1/2 for mixing & 1/2 for crust) 3 tbl flour

Preheat oven to 350. Beat half and half, apple juice, sweet potatoes, 1/4 stick of butter 1/4 cup brown sugar, nutmeg, 1/2 marshmellows and cinnamon with electric mixer on medium speed until well blended. Spoon into 2-qt. shallow baking dish; top with apple pie filling and pecans. Mix 1/4 cup brown sugar, honey bunches of oats and 1/2 cup marshmellows in large bowl. Sprinkle over fruit mixture. Then drizzel 1/4 stick of melted butter over the top. Bake 35 to 40 min. or until heated through.
