Creamy Spinach

This was probably THE favorite recipe of my Mom when I was growing up, and is now THE fave for my family!


1 10-oz frozen chopped spinach 1/4 cup mayonnaise (not salad dressing) 1/4 cup sour cream (fat-free works fine) 3 tablespoons lemon juice, preferably fresh salt and pepper optional: 12 quartered artichoke hearts

Thaw spinach and squeeze out as much water as you can. Mix spinach, mayonnaise, sour cream and lemon juice thoroughly. Mix in salt and pepper to taste, but go lightly and test again after cooking. Gently blend in artichoke hearts, if using. Cook over medium heat or at 80% power in microwave oven 15-20 minutes until the spinach is cooked. Taste and adjust for salt and pepper as needed, or add a bit more lemon juice if you think you want it more lemony. Serve hot as a vegetable, or cool and use as a dip, adding parmesan cheese if you wish. I often double or triple this recipe. Bon appetit!
