Cranberry Relish

This can be prepared the same day but I like to prepare it a couple of days ahead of the dinner so the flavors can meld together. You can omit everything but the cranberries, oranges, and sweetner if you prefer and it is still delicious.




1 bag fresh cranberries
1 seedless orange, unpeeled
1 inch piece fresh ginger (or more if you like ginger)
Sweetner to taste
¼ teaspoon grand marinier
Splash of cinnamon to taste
Cardamon to taste
Fresh ground black pepper to taste

Wash cranberries and orange, peel ginger, cut orange into quarters, removing stem piece, and chop ginger into smaller pieces. Put all the ingredients in a Cuisinart food processor and pulse several times to consistency you like - chunky or smooth. Refrigerate until ready to serve.
