Cranberry Mushroom Rice Pilaf

The tender cranberries and sweet curry give the rice a nice delicate flavor.

1 cup rice 1 cup chicken broth 1 cup water ½ cup Cape Cod Style Cranberries (or similar dried cranberries) 5 mushrooms - chopped 1 large green onion - chopped 1 celery stalk - chopped ⅛ teaspoon. sweet curry ½ teaspoon. salt ⅛ teaspoon. Pepper 1 garlic clove - chopped (opt.) 2 tbs. Olive Oil 1 tbs. butter

Chop mushrooms, onion and celery in food processor. Sauté over moderate heat cranberries, mushrooms, onion, and celery in Olive Oil until tender. Add rice to vegetables and stir fry 3 - 4 minutes. Add chicken broth, water, salt, pepper, garlic, sweet curry and butter. Bring to boil; decrease heat to simmer and continue cooking covered for 15 to 20 minutes until rice is tender (add more water if needed).
