Corn Casserole

Excellent with Mexican-themed dinners.




2 bags frozen corn 1 onion, finely chopped 1 tablespoon butter 1 packet knorr soup mix (onion if preferred) 1 can Rotel i can cream-style corn 1 cup grated cheddar cheese i cup crumbled bacon, optional

1. Saute the onion in butter till clear. Add the Knorr soup mix and Rotel. 2. Stir and add frozen and cream-style corn. Add crumbled bacon. 3. Simmer for 5 minutes then pour into casserole dish. Top with grated cheese and cook at 300 degrees for 25 minutes.
