Confetti Coleslaw

A delicious and slightly different tasting coleslaw that is not only delicious but nutritious as well.

½ small or ¼ medium to large green Cabbage ½ small or ¼ medium to large red Cabbage 1 or 2 cloves (optional) Garlic, peeled 2 large peeled Carrots ½ medium sweet Onion 2 teaspoon dried Dill or 4 teaspoons fresh, chopped Dill and/or 1 ½ Tbs fresh grated Horseradish or 3 Tbs prepared Horseradish Sauce 2 Tbs prepared brown spicy Mustard ¼ cups chopped fresh Parsley ½ cups Mayonnaise ¼ cups plain Yogurt Salt and Pepper to taste

Cut peeled carrots into chunks and place in Cuisinart with chopping blades. Add (optional) garlic and parsley. Process carrots, parsley and (optional) garlic into relatively small bits. Replace blades with shredder. Shred onion, and cabbages into Cuisinart. Remove shredder and pour contents into a large bowl, scraping sides with a rubber spatula. Add dill, horseradish or horseradish sauce, mustard, mayonnaise and yogurt. Mix well. Add salt and pepper to taste. Serve at once to appreciative guests or family. Hint: Once you have all your ingredients assembled it takes less than five minutes to make, so even if you are entertaining you can prepare this at the last minute, when it tastes best.
