Carrot Souffle

Even those who do not like carrots love this dish. Easy to prepare and uses common ingredients.


2 Cups Carrots, cooked and mashed (2 Lbs) 1/2 Cup Butter, melted 1/2 Cup sugar (can cut to 1/4 cup) 3 Tbsp. Flour 1 Tsp. Baking Powder 3 eggs, beaten Dash cinnamon

Preheat Oven 400 degrees F. Grease a 1 1/2 quart casserole dish. Combine all the ingredients in order given. Mix well. Pour into prepared casserole dish. Bake 400 degrees F. 15 minutes, Reduce oven temperature 350 degrees F. and continue baking for 45 minutes
