Sauté all the vegetables until tender Combine vegetables and black eyed peas Combine 1/4 cup cider vinegar, 1/4 cup sugar, salt & pepper, 1/2 cup olive oil and parsley and mix well then add to pea mixture Taste to re-season Serve at room temperature. (not cold)
