1 teaspoon hot sauce
¼ cup cider vinegar
¼ cup sugar
½ cup olive oil
2 tablespoons chopped fresh parsley
s and p to taste
2 cans (drained) black eyed peas
red, green, yellow bell peppers minced (½ ea.)
2 stalks celery minced
½ red onion minced
1 clove garlic minced
1 jalapeno pepper (seeded) minced

Instructions
Sauté all the vegetables until tender
Combine vegetables and black eyed peas
Combine ¼ cup cider vinegar, ¼ cup sugar, salt & pepper, ½ cup olive oil and parsley and mix well then add to pea mixture
Taste to re-season
Serve at room temperature. (not cold)
