Sauté all the vegetables until tender Combine vegetables and black eyed peas Combine ¼ cup cider vinegar, ¼ cup sugar, salt & pepper, ½ cup olive oil and parsley and mix well then add to pea mixture Taste to re-season Serve at room temperature. (not cold)
