6 Large Red Potatoes
1 1/2 Cucumbers, seeded and diced
1/2 large Red Onion, diced
1 Cup Sour Cream
1 Tablespoon Dried Dill
Salt and Pepper

Halve potatoes, slice and cook until done but firm. Plunge into cold ice water to stop cooking process. Drain and dry on paper towels. Mix all ingredients together. Use more sour cream and dill, salt and pepper to taste. Refrigerate until cold. Best if made ahead and stored in refrigerator to blend flavors.
