Artichokes With Three Sauces

Perfect artichokes, ready in just 8 minutes. The best part is that these can be made in advance and served at room temperature with any of our  suggested sauces.

½ cup water

2 lemons, halved

6 medium artichokes

Instructions

1. Put water and the juice of 1 lemon into the Cuisinart Pressure Cooker. 

2. Prepare artichokes by cutting the stem off at the base to make a nice and even flat surface.  Cut ¹⁄ ³ off the top, and remove the outer layers of tough leaves.

3. Rub the cut parts of the artichoke with the remaining lemon halves. Place them top down into the pot. Secure the lid and select High pressure.

4. Put the pressure cooker over high heat until pressure cooker reaches full pressure. Reduce temperature to maintain pressure* and set a timer for 4 minutes.

5. When time expires, release pressure by selecting quick pressure release. When the red safety valve drops, remove lid.

6. Serve immediately with melted butter or with one of our suggested dipping sauces.

* Unit reaches full pressure when red safety valve pops up and steam releases continuously from the pressure release valve. Regulate pressure by reducing temperature to medium/medium-low to maintain full pressure. There should be slight steam and consistent hissing from the pressure release valve.

Keep a close eye on the pressure cooker when cooking. Some adjustment of temperature may be necessary to maintain pressure.
