Apples & Sweet Potatoes

Ingredients

6 Medium Size Sweet Potatoes or Yams (yams are stringier)
4 Tart Apples, peeled & sliced
¼ Cup Chopped Pecans
¾ Cups Firmly Packed Brown Sugar
Cinnamon
½ Cup Butter, melted

Instructions

Bake Sweet Potatoes (pierce skin) 40 to 60 minutes in 400 degree oven or boil whole potatoes 30 – 35 minutes. Drain & cool. Potatoes should still be firm enough to slice without falling apart. Remove sweet potato skins & slice to ¼” to 12” thickness. Grease a casserole pan. Alternate layers of sliced sweet potatoes & apples. Sprinkle each layer with nuts, brown sugar, cinnamon & butter. Arrange last layer of apples attractively over the top. Bake covered, 350 degrees, for 30 minutes. Uncover & bake an additional 45 minutes
