Wild Chili


2 Tbsp olive oil

2 lbs ground elk

2 lbs ground buffalo

2 med onion chopped fine

48oz tomato juice

12oz tomato paste

2 Tbsp chili powder

1 tsp paprika

1 Tbsp red pepper

2 cans kidney beans

2 cloves of garlic minced

4 oz diced green chili peppers

1 Tbsp salt

2 tsp cayanne pepper

1 tsp oregano


Heat oil in large saucepan, brown meat. Add onions, tomato juice, tomato paste, diced tomatoes, chili powder, paprika, red pepper, garlic, chili peppers and salt. Cook on low for 6 hrs, stirring occasionally. Add beans 30 min before the end. Serve with crackers or cornbread and shredded cheddar cheese.

*Or you can brown meat in a pan and add all ingredients in a slow cooker and cook overnight on low add the beans in the morning.
