Quinoa with capers


I cup quinoa
2 cups water
3 Tbsp. extra virgin olive oil
1 Tbsp. freshly squeezed lemon juice
2 garlic cloves, minced
2 Tbsp. capers
sea salt and black pepper to taste


Cook quinoa according to package directions. Let quinoa cool for a few minutes.
Mix oil, lemon juice and garlic in a small bowl.
Pour dressing over quinoa. Toss in capers and season with salt and pepper. Enjoy!
