This recipe is over 60 years old. Mom is an awesome cook with her home made Caramel Pecan Cinnamon Rolls her specialty. But her Baked Beans are also legendary. At 87, she is still going strong and recently made this recipe for a family gathering. It has been altered over the years to recognize new technology like slow cookers. Be prepared to give out the recipe!
Mom's Baked Beans
1 pound dried Great Northern beans
1/2 tsp baking soda
1/2 pound bacon, diced
1/2 cup chopped onion
1 tsp salt
2 tsp vinegar
1 tsp prepared mustard
1/2 cup white sugar
3/4 cup packed brown sugar
2 Tbsp catsup or BBQ sauce
2 Tbsp molasses
Add baking soda to beans, cover with water by at least 2 inches and let stand for several hours or overnight. Alternatively, bring the water just to a boil, turn off the heat and let stand for a couple of hours.

In the meantime, dice the bacon into 1/2 inch to 1 inch pieces. Place in a frying pan and cook just to render off some of the fat.

Drain the beans and add to a slow cooker. Add the cooked bacon and all the rest of the ingredients; stir well. Add water to cover by 1/2 inch to 1 inch. Cook on high for approximately 8 hours. Cooking time will depend on your slow cooker. I put mine on before I go to bed and the beans are done in the morning.
